Coconut Cardomom Rice Pudding

DESCRIPTION

This sugar free rice pudding is so creamy with the perfect texture and sweetness. A perfect dessert for all the family including baby. This can be prepared in advance and frozen so you can just pop out and defrost when you need.


INGREDIENTS

1/2 cup pudding rice or risotto rice

2 cups full fat milk

6 cardomom pods, seeds removed & ground or 1/2 tsp ground cardomom

1 x 400ml tin full fat coconut milk

Zest of 1/2 orange

For the topping (optional):

Orange segments

Ground pistachio nuts


METHOD

1. Place all the ingredients in a heavy based saucepan and stir to combine.

2. Bring to the boil, then turn down the heat to a simmer. Cover with a lid and simmer slowly for 15 minutes, stirring frequently. The removed the lid and simmer for 10-15 minutes until the rice is soft and the texture is creamy.

3. Allow to cool slightly before serving. I love this topped with orange segments and ground pistachio nuts.

Great for baby 8-9 months +
