Banana & Blueberry Oat Bread

DESCRIPTION
This banana & blueberry oat bread is so delicious and a great healthy snack for school lunchboxes or a snack on the go for all the family including baby.
INGREDIENTS
300g porridge oats
2 tbsp linseeds
1 tbsp milled flaxseed
125g fresh or frozen blueberries
4 ripe bananas, mashed
6 eggs
METHOD
1. Preheat oven to 180C fan and line a bread tin with baking parchment.
2. Place the porridge oats, linseed, flaxseed, and blueberries in a large bowl.
3. Separately whisk the eggs with the mashed banana and then mix this well into the dry ingredients.
4. Spoon into a lined bread tin and place in preheated oven for approximately 55 minutes.
5. Cool on a wire rack, then cut into slices and serve. Delicious served warm.
NOTES:
Suitable for babies from 6 months +
Suitable for freezing - This bread can easily be frozen in slices and then taken out to thaw as needed. A great healthy snack for school lunch or on the run.
