Oat Cookies

DESCRIPTION

Easy oat cookies for babies and toddlers made with dried apricots, apple, and carrot. Soft, naturally sweet, and perfect for little hands – a wholesome snack with no added sugar!


INGREDIENTS

3 eating apples, peeled, cored & sliced

100g dried apricots, finely diced

1 carrot, finely grated

150g unsalted butter, melted

1 tbsp cinnamon

300g porridge oats*


METHOD

  1. Heat the oven to 180 C fan.

  2. Line a baking tray with parchment paper.

  3. In a large bowl, mix all the ingredients together. Put a heaped dessert spoon of the cookie mixture onto a baking tray and flatten with a fork.

  4. Bake for 22-24 minutes until lightly golden.

  5. Take the tray out of the oven and leave the cookies to cool on the tray for a few minutes before transferring them to a wire rack. 


NOTES:

*If using jumbo oats, pulse in a food processor to make the oats a little finer. This will help the mixture stick together better. If oats are too big they will be more crumbly.

  • Best eaten fresh out of the oven

  • Can be stored in airtight container for up to 3 days.

  • Suitable for freezing
