DESCRIPTION
Easy oat cookies for babies and toddlers made with dried apricots, apple, and carrot. Soft, naturally sweet, and perfect for little hands – a wholesome snack with no added sugar!
INGREDIENTS
3 eating apples, peeled, cored & sliced
100g dried apricots, finely diced
1 carrot, finely grated
150g unsalted butter, melted
1 tbsp cinnamon
300g porridge oats*
METHOD
Heat the oven to 180 C fan.
Line a baking tray with parchment paper.
In a large bowl, mix all the ingredients together. Put a heaped dessert spoon of the cookie mixture onto a baking tray and flatten with a fork.
Bake for 22-24 minutes until lightly golden.
Take the tray out of the oven and leave the cookies to cool on the tray for a few minutes before transferring them to a wire rack.
NOTES:
*If using jumbo oats, pulse in a food processor to make the oats a little finer. This will help the mixture stick together better. If oats are too big they will be more crumbly.
Best eaten fresh out of the oven
Can be stored in airtight container for up to 3 days.
