Slow Cooker Red Cabbage

DESCRIPTION
This easy slow cooker red cabbage is the perfect recipe for introducing red cabbage to your baby and also a great recipe to prepare ahead of time for Christmas dinner for all the family. Everyone will love it.
INGREDIENTS
1 red cabbage*
2 Bramley apples, peeled, cored and thinly sliced.
1 red onion, peeled & thinly sliced
1 tbsp cider vinegar
Zest of orange
2 tsp mixed spice
METHOD
1. Turn on your slow cooker to low.
2. Remove the outer leaves of the red cabbage and discard. Quarter the red cabbage and remove the tough inner core. Then cut each quarter of cabbage into half again and slice very thinly. (We want it to be very thinly sliced so the cabbage breaks down over the cooking time so it’ll be soft enough for your little one.)
3. Add the cabbage to the slow cooker along with all the other ingredients. Give a stir and then cook on low for 8 hours.
NOTES:
• * Wear rubber gloves when peeling red cabbage so your hands don’t stain.
• If you’d like to make the cabbage smoother for your baby, you can whizz or pulse in a food processor or mash well with a fork.
• This will keep in the fridge for up to 3 days or in the freezer for up to 3 months.
• Defrost completely, then reheat in a pan or microwave to serve.
