Courgette & Feta Mini Savoury Muffins

DESCRIPTION
Using up some seasonal veg while also making handy, nutritious snacks for the kids!
These are super easy to make, a great lunchbox idea for back to school and a great baby led weaning lunch or snack !
You can freeze any extras you have in a ziplock bag for later or keep them in an airtight container in the fridge for up to 3 days.
INGREDIENTS
2 cups self raising flour
1 tsp oregano
1 tsp smoked paprika
175g courgette, finely grated
100g feta cheese
1 cup full fat milk
1 egg, whisked
80g melted butter
METHOD
1. Preheat oven to 180C.
2. Mix all the dry ingredients together in a large bowl. Mix in the courgette and feta.
3. Whisk the egg with the milk and melted butter and stir well into the other ingredients.
4. Divide evenly into the muffin tin.
5. Bake for 17-18 minutes at 180C fan or a few minutes longer for larger muffins.
NOTES:
This recipe makes 36 mini muffins but you can also make them normal muffin size and cook them for a few minutes longer.
