Spinach & Basil Hummus

DESCRIPTION
This spinach and basil hummus is a nice twist on the traditional hummus and great to get the added greens in. Using dips or spreads are a great way to encourage little ones to dry different tastes and colours too.
Green hummus is delicious with melted cheese on toast, with eggs, on chicken or even in soup. It’s so versatile.
INGREDIENTS
1 tin chickpeas, drained & rinsed
1 garlic clove, crushed
2 tbsp extra virgin olive oil
3 tbsp cooled boiled water
3 large handfuls spinach
20g fresh basil
Juice 1/2 -1 lemon
1 tbsp cumin
1 heaped two light tahini paste
40g grated Parmesan
METHOD
Add all the ingredients to a blender or food processor and pulse until desired texture. Taste and add more lemon juice if needed.
