Turkey Meatballs

Serves: 2 Adults + 3 children


DESCRIPTION

Healthy, easy and delicious, you're guaranteed to win with these turkey meatballs. A great midweek dinner recipe. You could batch cook the sauce and meatballs & freeze them separately so you have them at the ready for busy days. The meatballs are a perfect finger food for your weaning baby.


INGREDIENTS

For the sauce:

1 tbsp oil

1 onion, finely diced

2 garlic cloves, crushed

1 courgette, finely grated

1 carrot, finely grated

1 tbsp tomato purée

2 tins chopped tomatoes

2 tsp balsamic vinegar

For the meatballs:

300g lean turkey breast mince

1 garlic clove, crushed

Handful fresh basil, torn into small pieces

1/2 cup grated cheese Parmesan cheese

1 egg

Handful breadcrumbs


METHOD

  1. Heat the oil in a large non-stick frying pan with a lid, then tip in the onion, garlic, carrot and courgette, and stir well. Cover the pan and cook over a medium heat for 8 mins, stirring every now and then. Pour in the chopped tomatoes, tomato puree & balsamic. Cover and leave to simmer for 20 mins.

  2. Meanwhile, tip the mince into a large bowl. Add the garlic, basil, Parmesan, egg and breadcrumbs, and mix with your hands until evenly combined. Shape into 12 meatballs

  3. Add a little oil to a non-stick pan and gently cook the meatballs until they just begin to colour. Give the sauce a stir, then add the meatballs. Cover and cook for 10 mins until they are cooked through and the veg in the sauce is tender. Serve with spaghetti or for a bit of a change, try courgetti spaghetti.


NOTES:

  • Sauce can be blended after step 1 if you’ve a fussy eater who might prefer a smooth sauce.

  • The sauce & meatballs can be batch cooked and frozen separately or all together. If you freeze separately it means you have flexibility to use the sauce on its own with pasta or chicken and the meatballs could be served with mash or as a finger food for baby.

  • Never add salt to baby’s food. Take out the baby’s portion/s and then season for the adults as required.
